Helmed by second-generation restaurateur Pinky Chandan Dixit, this new 60-seater dining room in Girgaon Chowpatty embraces the architectural charm of a 200-year-old heritage building. Featuring arched doorways, preserved original floor tiles, and high ceilings that invite natural light, the space unfolds across distinct, unhurried dining zones designed to let guests linger. It is a conscious, restrained evolution from the bustling, beloved neighborhood format of Soam and the playful, Bombay-inspired energy of Aamchee , stepping into a more relaxed, occasion-led dimension of luxury.  


The Architecture of a Culinary Journey


To understand the restraint and depth of Varsoo, one must look at the path of its creator. Pinky Chandan Dixit’s foundations were built at Sophia Polytechnic and polished at Le Cordon Bleu, London. However, the soul of her cooking philosophy was arguably forged during eight years of intensive cookbook research alongside the legendary culinary expert Tarla Dalal. This deep immersion into regional micro-cuisines allowed her to spend over two decades building Soam into a bastion of trust and homestyle comfort.

Our culinary journey highlighted several standout preparations from the core menu and the highly anticipated seasonal showcase:

  • The Elixirs: We began with the Jamun Masala, a beautifully balanced seasonal fruit cooler sharpened with lime, cumin, and black salt that cleanses the palate perfectly. Equally compelling is the Zesty Imli, a nostalgic yet sophisticated effervescent pairing of sour tamarind and sweet santra (orange) soda.  

  • Family Pani Puri Royale: This elevates street-food theatrics into an elegant interactive course. Crisp, flawless puris arrive with a dual selection of tart kokum and sharp mint-infused waters, allowing for a customized, layered burst of clean, refreshing flavour.  

  • Dal Dhokli Ravioli: A masterful nod to the contemporary diner. Delicately rolled wheat dumplings are stuffed with seasoned, savory mashed peas and submerged in a perfectly balanced, sweet-spicy Gujarati dal. It honors traditional textures while re-contextualizing the dish with clever finesse.

  • Shrikhand Puri Batata nu Shaak: A classic pairing that demands absolute technical perfection. The saffron-scented shrikhand is velvety and rich without being cloying, served alongside hot, puffed puris and light, flawlessly sautéed potatoes.  

  • The Seasonal Showcase — Mango Sandesh Ravioli: Sourced from their limited-edition menu, this dessert is a triumph of seasonal minimalism. Exquisitely thin, ripe mango slices function as the "pasta," encasing a delicate filling of sweetened, fresh chenna (cottage cheese). Placed on a pristine bed of smooth, naturally sweet aamras, it is an unadulterated celebration of the fruit.
